My research is multi-disciplinary and focuses on the impacts of foods on health. I have a particular interest in the link between diet, nutrition and the risk of diabetes, obesity and related disorders. Other major research interests include: dietary bioactive compounds and evaluation of their functionality; processing, preservation, and development of novel functional food products; quality control and quality assurance regarding food; food safety and toxicology.

I teach courses on the B.Sc. (Hons.) in Food Science and Technology and MS in Food Processing and Engineering; supervise MS students ("MS in Food Processing and Engineering" and "MS in Applied Human Nutrition and Dietetics"); provide consultancy services to different food processing industries, which include but not limited to food production, quality control, quality assurance, research and development of novel food products, etc. I am actively involved in a number of events and media to engage the public in issues relating to diet and health.
